Arnavut cigeri - Albanian liverAlbanian liver 

Ingredients:

  • 1,5 kg. lamb's liver 200 gr. 
  • (2 cups) flour salt 
  • 1 table spoon chili powder 
  • 1 teaspoon sumac 
  • 5 onions medium 
  • 1 bunch parsley thyme
  • 2 cups sunflower oil

 

Preparation:

Remove the fine membrane and dice the liver. Rinse well and place in sieve to draine. Sieve the flour and salt, toss the cubed. liver in the chili and in the flour, and shake in sieve to remove the excess flour. Heat the oil to high temperature and add the liver. Fry over a strong heat for 1-2 minutes. Remove with a strainer spoon, place in a serving dish. Slice the onions finely, rub with salt, rinse and squeeze dry. Mix with sumac, chili powder or paprika and the chopped parsley and serve with the fried liver.
