Zeytinyagli Taze Bakla - Horse Beans in Olive OilHorse Beans in Olive Oil

Ingredients:

  • 1.5 kg fresh horse beans
  • 2 onions, medium
  • 2 cups water with flour and lemon
  • 1 cup olive oil
  • 2,5 table spoons sugar
  • 1/4 lemon juice
  • 1/2 bunch dill
  • 500 gr. yoghurt

to wet the horsebeans:

  • Plenty of water
  • 1 table spoon flour
  • 1/2 lemon juice

 

Preparation:

Cut off both edges of the horse beans, rub with plenty of salt, keepin a big bowl for 10 minutes. Wash under running water and keep soaked for 5 minutes. Remove horse beans from water and string them with a knife, and put them into a bowl with water, flour and lemon.

Rub the onions with salt after you chop them. Set aside half a cup of water with flour and lemon. Put a little of the onions into a medium sized saucepan. Add the horse beans one by one, and continue with a layer of horse beans and a layer of onions until all the beans are in the pan. Add the half cup of water with flour and lemon, and the olive oil to the beans and onions. Sprinkle the sugar, add the water and put a plate on top of the beans close the lid and cook over high heat first, and low heat later, for about half an hour until the horse beans are soft. Add the lemon juice 10 minutes before you remove the pan from the heat. Let cool before you remove the lid. Remove the water. Turn upside down and add the water.

Add dill and serve with yoghurt.
